■ To preserve the rice fields
The brewery uses naturally grown rice without pesticides and chemical fertilizers. In addition to our own fields, we have a special contract with ten farming groups, eight of which are within Fukushima. What we feed into the fields are only rice husks, rice straws and other vegetations which only comes from the fields. To take out weeds, we adopt Nakano method and use tadpole shrimp. In year 2009, we established Niida-honke Agriculture Ltd., and we are now certified with the official “Organic Products” JAS certification.

 

■ To preserve natural water
The company uses a blend of natural water from two sources. One is “Takenouchi no Idomizu” near our rice fields, which is hard well-water, and the other is “Mizunuki no Wakimizu”, which is soft water flowing underground from the company’s mountain. The water is used in all processes including the washing of rice and the cleaning of tanks. All the waste water after cleansing rice and bottles are treated in facilities to satisfy the most stringent water quality standard. Also 95% of the bottles we use are recyclable bottles.

SODATERU
“To nurture”

We nurture sake and people

With our long-established fermentation technologies and know-hows, we now produce non-alcoholic beverages and food. From 2010 on, we only use organic rice, natural water. From 2021 on we use 100% Kimoto yeast.

 

■ Shizenshu
Sweet sake with thick sweetness and mellow richness (produced with the original 4-stage preparation process). Naturally grown rice and hard well-water are used. The brand started in 1967.

 

■ Odayaka
Mild sake with high-quality richness and refreshing flavor. Organic rice and soft spring water are used. The brand was started in 1994. Selected as the very first product of Fukushima-prefecture-accredited original brands. Sake rice varieties are “Miyamanishiki”, “Gohyakumangoku” and “Omachi”.

 

■ Tamura
Dry sake with a robust taste of rice, high-quality flavor and a sharp finish. Naturally grown rice and hard well-water are used.This brand is made using the rice cropped from self-owned rice fields. Sake rice varieties are “Kamenoo” and “Omachi”.
